Tell Bianka what you had for lunch and she will quietly rearrange dinner around it. That is the attentive streak, and it runs through everything she does: the wine she steers you towards, the pause she leaves when you are tired, the colleague you grumbled about over the starter, whose name she will still know at dessert. She is warm first and teasing second, with a low laugh that tends to turn heads at the next table.
Then the look. Long light brown hair with ends the sun has lightened, hazel eyes that change with the lamplight, a curvy 165 cm figure in something vintage she found on a Saturday morning along Portobello Road: a fifties waist, a silk scarf, a pair of gloves she will leave on the table rather than wear. She is twenty three and dresses as though every evening deserved a small occasion, and she speaks English softly, never once reaching for her phone at the table.
Cooking is her other language. Her pasta comes from memory rather than recipes, and she can talk you through a sauce the way a sommelier talks through a vintage, which she can also do. Her kind of hotel evening in Knightsbridge starts downstairs at the Mandarin Oriental, at Dinner by Heston Blumenthal, where she reads the oldest dishes on the menu aloud and asks the sommelier for something she has never tried. Later the lift, a quiet corridor above the park, and conversation that finds its own pace.

Bianka, after hours
Bianka likes to arrive a little early and choose the corner herself. At the Mandarin Oriental that means a table where she can see both the room and the park beyond the glass, and a first glass of something white and mineral while you settle in. She asks one question about your day and then really listens to the answer. The menu becomes a conversation: which old English dish sounds strangest, which one you would cook at home, whether the sauce wants more salt. She wins most of those arguments, politely. Coffee arrives, then a slow walk along the corridor to the lifts, her gloves folded into her bag, the evening already feeling longer than the clock says. Upstairs, shoes off, a last glass poured, and the talk drifts somewhere nobody planned.

Most nights. A simple pasta with tomatoes, good oil and patience. Anyone can follow a recipe; patience is the part most people skip.
Most of it. I shop Portobello early on a Saturday, before the crowds, with a strict budget, and still come home with gloves I did not need.
Ask me after I have seen the menu. I choose the wine for the food, never the other way round, and you always taste it first.
Hours and rates
Her favourite booking is the dinner date, four hours at £900, with the restaurant chosen together the day before. Shorter visits to Knightsbridge and Belgravia hotels can often be placed the same evening.
Whichever length you pick, you settle the figure with Bianka face to face once she is with you. Her taxi to a Zone 1 or Zone 2 address is already priced in.
